Wednesday dinner

Greek Salad with Turkey (Mike: thumbs up)

leftover shredded turkey tenderloin
romaine
diced roma tomatoes
red onion, shaved
pitted kalamata olives
feta cheese
Kraft Greek vinaigrette

Me: Sauteed bean sprouts and yellow pepper

Boys: (meh)
Leftover shredded turkey tenderloin
Leftover home fries with ketchup
Baby carrots

Tuesday dinner

Baked Marinated Salmon (grown-ups -- two thumbs up; kiddos -- fail)

1-1/2 lb salmon filet
1/3 c soy sauce
1/4 c brown sugar
1/3 c water
pepper
splash lemon juice

1) Combine ingredients for marinade. Add salmon and marinate for at least 2 hours.
2) Make a loose foil packet around marinated salmon, spooning a bit of marinade inside packet. Seal. Bake on a baking sheet 15-20 min at 400F, or until fish flakes easily with a fork.
